Fish Tacos with Chipotle-Lime Crema
Inspired by Kowalski’s
½ Cup Kowalski’s Signature Fresh Chipotle Lime Vinaigrette (from produce department) *see below for alternative recipe for Chipotle-Lime Vinaigrette and use ½ cup for this recipe.
1 tsp. ground cumin
1 tsp. chili powder
½ tsp. smoked paprika
1 lb. fresh white fish fillets (Cod works great.)
6 (6”) corn or flour tortillas
Toppings: Mexican blend shredded cheese, cilantro, mixed greens, diced tomatoes, bell peppers, guacamole and include any of your favorites.

In large mixing bowl, combine vinaigrette and spices through paprika; marinade fish for 20 minutes or longer in refrigerator. Bring to room temperature before baking.
When ready to bake, remove fish from marinade and place on a parchment paper lined baking sheet. Discard marinade. Bake fish at 425 degrees until fish flakes with a fork approximately 10-12 minutes. Turn on broiler and broil on high until fish is lightly brown on top. (2-3 minutes) Remove from oven and cut into bite-sized pieces. Serve warm on a bed of mixed greens with toppings or on corn or flour tortilla.
Serves 2-4
Chipotle-Lime Crema
Makes 1 cup
1 cup sour cream
1 TBS. lime juice (1 medium lime)
1 ½ tsp. lime zest (1 medium line)
1 medium whole chipotle chile in adobo sauce, plus 1 tsp. adobo sauce from can.
1 tsp. garlic powder
1 tsp. white sugar
½ tsp. smoked paprika
Salt to taste
*Mix all ingredients in a food processor or blender. Store covered in refrigerator.
Mexican Street Corn
4-8 ears corn on the cob
4-8 lime wedges
1 cup crumbled Cotija cheese (Mexican cheese)
Chipotle Chili Powder to taste
Heat grill to medium temperature. Brush corn with olive oil. Place on grill, turning corn every 3-5 minutes until completely cooked. (8-10 min.)
Place on serving tray. Squeeze fresh lime juice on corn and lightly salt and crumble Cotija cheese on top.

Serves 6
½ cup olive oil
¼ cup sugar
¼ cup fresh lime juice
½ tsp. cumin
½ tsp. chipotle powder to taste
½ tsp. garlic powder
Whisk all ingredients together and store in refrigerator until serving.
