Chicken and Spinach Waldorf Salad
Serves 4-6
1 ½ lbs. cooked boneless chicken breast
2/3 olive oil
Kosher salt and ground black pepper
¼ cup Marcona almonds
¼ cup walnut halves
3 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 teaspoons liquid honey
4 cups mixed greens
4 ounces spinach
½ cup golden raisins
4 ounces grated sharp cheddar cheese, grated
1 crisp red apple, unpeeled
3 soft-boiled eggs, quartered
1. For dressing, whisk olive oil, vinegar, mustard, honey, 1 ½ tsp. salt, and ½ tsp. pepper.
2. In a large bowl, combine mixed greens, spinach, raisins, cheese, chicken, and nuts.
3. Before serving, grate the apple on top and add the eggs. Pour the dressing over salad and toss gently.
