Zucchini Chocolate Cake or Cupcakes.

½ cup butter

½ cup oil

1 and ¾ cup sugar

2 eggs

1tsp. vanilla

2 cups shredded zucchini

½ cup buttermilk

2 and ½ cups flour

4 TBS dark chocolate coco

½ tsp. baking powder

1 tsp. salt

1 tsp. soda

Mini chocolate chips


Cream oil, butter and sugar. Add eggs. Vanilla and milk. Mix dry ingredients separately, then combine.Stir in zucchini and mini chocolate chips.

Bake for 35-40 minutes at 325 degrees in a 9 x13 cake pan.

For cupcakes bake for 25 minutes at 325 in a cupcake pan for 12.
