Fresh Salsa & Guacamole

6 plum tomatoes, seeded and finely diced (1 ½ cups)

¼ cup finely chopped white onion

¼ cup snipped fresh cilantro

1 ½ tablespoon fresh lime juice

½ teaspoon salt

1/8 teaspoon red pepper flakes

Optional: add 2 firm, diced avocados, peeled and diced.


1. Finley dice tomatoes and onion and place in bowl. Add cilantro, lime juice, salt and red pepper flakes. Let stand 10 minutes to allow flavors to blend.

Yields: 1 ½ cup salsa and 1 ½ cups guacamole
