Cinnamon Oatmeal Pancakes

1 cup flour

3/4 cup rolled oats

1/4 cup brown sugar

1 tsp. baking soda

1/2 tsp. cinnamon

1/4 tsp. salt

1 1/2 cup buttermilk

1 large egg

3 Tbsp. melted butter


Combine flour, oats, brown sugar, baking soda, cinnamon and salt. Set aside. Pour buttermilk, egg and melted butter into small bowl; whisk until frosty. Add to dry ingredients; stir well. Stir in extra milk if too thick.


Heat greased non-stick griddle; spoon batter onto heated surface and cook until pancakes bubble and brown on edges. Serve with warm maple syrup.
